kapsa ( chicken & rice) Ingredients: 1.5kg chicken pieces 2 cups White Basmati Rice 400g tomato paste 1 medium onion, chopped 2 teasp garlic powder 1 teasp ground cumuin 2 teasp ground cardomon 2 teasp chilli flakes (optional) 6 teasp of olive oil 1 Large Tomato,chopped 1/4 cup raisins 1 cinnamon stick 1 preserved lemon (optional) Salt and pepper to taste Method: In a large pot add oil, chopped onions and cumuin stirring until browned on high heat. Add boiling water to the pot until half full, add salt and peper, cardomon, garlic powder, chilli, tomato, tomato paste, preserved lemon and raisins. Add chicken to broth, cover and simmer on medium heat 30-40 min. Remove chicken from broth, place on baking dish and put into a preheated oven at 180c for 30-40min till skin lightly crisped. Strain the broth, keep the strained ingredients in one bowl and the broth in another bowl. In the pot, add the rice along with 4 cups of the Kabsa broth. Bring to boil then reduce heat to low, cover and cook rice for 10-15 min untill light and fluffy. Place rice on platter, place chicken on top then garnish with strained ingredients and serve.

Grilled Chicken Wings ? Wings: ? 1/2 cup soy sauce ? 1/2 cup Italian-style salad dressing ? 3 pounds chicken wings, cut apart at joints, wing tips discarded ? Sauce: ? 1/4 cup butter ? 1 teaspoon soy sauce ? 1/4 cup hot pepper sauce or to taste Method : Combine 1/2 cup soy sauce, Italian dressing, and chicken wings in a large, zip-top bag. Close bag and refrigerate 4 hours to overnight. Preheat an outdoor grill for medium heat. In a small saucepan, melt the butter. Stir in the 1 teaspoon soy sauce and the hot pepper sauce. Turn off heat and reserve. Remove the chicken wings from the marinade and pat dry. Cook the wings on the preheated grill, turning occasionally, until the chicken is well browned and no longer pink, 25 to 30 minutes. Place grilled wings in a large bowl. Pour butter sauce over wings; toss to mix well. Note: Aluminum foil helps keep food moist, ensures it cooks evenly, keeps leftovers fresh, and makes clean-up easy.

Paratha Recipe Wheat Flour (Atta) as per consumption 1 tbsp Oil Salt as per taste Butter/Ghee (Pure ghee) for frying Water for kneading Method Step 1 Make dough out of whole-wheat flour (atta), 1tbsp oil & salt, as you would do for any paratha/roti. Step 2 Make dough 30 minutes before and cover it with moist muslin cloth. Step 3 Take a Ping-Pong ball size lump of dough. Now roll it into a circle of appox. 5 to 6 " diameter using dry flour. Step 4 Heat the ghee so that it turns to liquid. Step 5 Now spread the ghee properly over entire surface. Step 6 Using a knife make a 2" cut lengthways and fold it inwards. Step 7 Spread Oil on every fold. Now press it lightly towards the center to show the layers clearly and roll like a paratha. (Refer the picture). Step 8 Cook on a pre-heated Tawa (flat griddle plate). Step 9 Turn the lachha paratha and pour half tablespoon oil or butter. Step 10 Spread it on the paratha and shallow fry over low heat. Step 11 Turn it and again pour oil or butter on the other side. Cook the parata on a low heat till golden brown.

Chicken Nuggets Ingredients 1 cup all-purpose flour 1 tablespoon seasoned salt Salt and freshly ground black pepper 2 large eggs 2 cup seasoned breadcrumbs 2 chicken breasts, cut into small pieces Vegetable oil, for frying Ketchup, for serving Method: In a plastic bag, mix the flour, seasoned salt and some salt and pepper. In a bowl, mix the eggs with 2 tablespoons water. In a separate bowl, add the breadcrumbs. Shake the chicken pieces in the bag to coat. In batches, dip them in the egg wash, then in the breadcrumbs. Heat about 2 inches of vegetable oil in a large skillet over medium-high heat until a few breadcrumbs dropped in the oil start to sizzle immediately. Fry the chicken, in batches if needed, until golden brown and cooked through, a couple minutes per side. Drain on a paper towel and serve with ketchup..

Honey and gingered grill fish ingredients: 1/3 cup orange juice 1/3 cup soy sauce 1/4 cup honey 1 green onion, chopped 1 teaspoon ground ginger 1 teaspoon garlic powder 1 salmon fillet (1-1/2 pounds and 3/4 inch thick) Method: Coat grill rack with cooking spray before starting the grill. In a bowl, combine the first six ingredients; mix well. Set aside 1/3 cup for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag or shallow glass container; add salmon and turn to coat. Seal or cover and refrigerate for 30 minutes, turning once or twice. Drain and discard marinade. Place salmon skin side down on grill. Grill, covered, over medium-hot heat for 5 minutes. Baste with reserved marinade. Mexican Rice 1 cup basmati rice cooked 1 onion julienne 1 teaspoon garlic a handful of chopped spring onions 3 potatoes cut into crisps and fried a handful of chopped coriander 5 tablespoon chilli garlic sauce 2 tablespoon of hot chilli sauce 2 chicken fillets hammered to flatten and marinated in salt and lemon juice. 1 egg beaten breadcrumbs oil to fry METHOD dip the fillets in egg and then in the breadcrumbs and then fry in oil till crisp and cooked through. using a sharp knife cut the fillets width ways into strips. leave aside In a wok add a little bit of oil and then the onions. sizzle the onions and then add the garlic .as aroma rises add the rice ,chilli garlic sauce,hot chilli sauce and mix well. your rice should look pinkish in color. If not add more of the sauces. now add the coriander and the spring onions. mix it in. add the chopped chicken and distribute evenly. Finally add the crisps and serve immediately.

Juicy hot Chicken Manchurian Ingredients: 300 gm boneless chicken 4 garlic cloves, chopped 1 egg, beaten 4 tbsp tomato ketchup 3tbsp chili garlic sauce 1 capsicum, chopped 1 spring onion, chopped (only green part) 1/2 lemon Salt to taste Black pepper to taste White pepper to taste 2 tbsp soy sauce 2 tbsp flour 2 tbsp corn flour Method: Put chicken in a bowl and add 2 chopped garlic, white pepper, black pepper, salt,1/2 egg, flour and 1tbsp oil. Mix it and deep fry it. Set aside. In a pan heat 2 tbsp oil, add 2 cloves of chopped garlic and fry it. Add capsicum, green onion and sauté it. Add fried chicken, tomato ketchup, chili garlic sauce, salt, black and white pepper and mix it. Now add 1 cup water and cook it for 2-3 minutes. Now add soy sauce. Dissolve corn flour in little water and put it in Manchurian gravy. Stir it and cook till it thickens. Before serving pour some drops of lemon juice. Serve it with fried rice.
